Über Mexiko La Concordia Espressobohnen
Chiapas ist, gemessen an der Menge, der größte Produzent Mexikos und derjenige, der den meisten Kaffee mit Bio-Zertifizierung produziert. Der größte Teil der Kirschen wird von Kleinbauern angebaut, die im Durchschnitt weniger als fünf Hektar pro Kopf bewirtschaften. Dieser südlichste Bundesstaat Mexikos ist reich an einer vielfältigen Kultur, Flora und Fauna, die in jeder Hinsicht mit dem Kaffeeanbau verbunden ist. CAFECO ist eine Kaffeebauernkooperative aus der Gemeinde La Concordia, die mehrere Bio-Erzeuger mit unterschiedlichem Hintergrund zusammengebracht hat.
Diese Mischung setzt sich aus zwei verschiedenen Kaffeesorten zusammen, Typica und Bourbon. Die Fincas, auf denen diese Kaffees angebaut wurden, liegen auf einer Höhe von 1.300 m ü.d.M. Die Kirsche reift am Baum, bevor sie geerntet wird, um später von Hand verlesen zu werden. Nach der Ernte wird die Kirsche zunächst entpulvert und 16 Stunden lang fermentiert. Danach wird der Kaffee, wie der Name des Verfahrens schon sagt, gewaschen und zum Trocknen für 5 Tage auf Terrassen gelegt.
