In the highlands of southern Ethiopia, past a series of washed-out road signs and terraced eucalyptus groves, lies the steep, green region of Shoondhisa – a place marked by shifting cloud shadows, corrugated roofs, and the slow efficiency of rural systems at work.

At 2,140 meters above sea level, a group of smallholder farmers delivered freshly harvested coffee to a place known locally as Suke.

The station itself – an arrangement of timber racks, canvas covers, and weather-worn clipboards – was run by a man named Ture Waji, though most people in Guji referred to him simply as The King. From this location, in the dry season of late 2024, a particular lot of Gibirinna 74110 and Serto 74112 was sealed into oxygen-poor bags, left undisturbed for 86 hours, and then dried meticulously for 25 days on elevated beds under netted shade.

The resulting coffee – dried stone fruit, clove, and the sort of sweetness that seems engineered rather than grown – was later selected for reasons that remain strategically ambiguous.
