Sunny Coffee is a group of farmers, passionate roasters, baristas, and coffee processors.
The team operates a small processing facility which is based in the Loa district, South East of Bandung in West Java.
The coffees are grown around Loa (1,400-1,800 MASL) and Kamojang (1,200-1,400 MASL) spread across a 3,000 ha agroforestry system, which allows farmers to adapt to the recent experiences of climate change and build economic resilience whilst preserving the local ecosystem.
The prevalent coffee varieties in the area are Typica and Bourbon (Yellow Catura and Tekisic) hybrids.
After harvesting and washing, the cherries are placed in fermentation tanks to be inoculated, in this case utilizing Klebsiella p. bacteria & Saccharomyces cerevisiae yeast before sealing the tanks to let the coffee ferment for a few days. Once the target pH level is achieved, the cherries go straight to drying on raised beds to allow air to flow around the fruit and enable an even drying process for around 2 weeks.
