COLOMBIA Magnum Sidra - Premium Filter Coffee
The Bayter family's agricultural journey began in 1995 at El Vergel farm in Fresno, Tolima, initially cultivating avocados. In 2006, a disease devastated their avocado crops, prompting diversification. Between 2009 and 2010, Martha Bayter introduced coffee varieties like Catimor, Red Caturra, and Yellow Caturra, marking their shift to coffee farming.
The family immersed themselves in coffee processing, learning about pulping and fermentation. In 2016, guided by expert Miguel Jimenez, they planted high-value varieties such as Geisha, Java, Pacamara, Red Bourbon, and Laurina, with their first specialty harvest in 2017.
By 2018, El Vergel farm adopted modern techniques, including aerobic and anaerobic fermentation, enhancing flavors. They also acquired silos for optimal storage, ensuring consistent quality. Today, the Bayters conduct scientific research on bacteria and yeast to control fermentation precisely, experimenting with microorganisms to influence flavor and quality. El Vergel, now boasting over 28 varietals, is the first Colombian farm to develop the kOJI fermentation process using Aspergillus oryzae fungus, significantly enhancing coffee flavor complexity through processing.

PROCESS
The coffee undergoes a 72-hour fermentation in plastic tanks with lixiviates from Java fermented coffee, enhancing its flavor. This two-step drying process includes mechanical drying in a silo to prevent over-fermentation, followed by 18 days of sun exposure. The beans then stabilize in hermetic bags for 30 days before milling.
Lixiviates, or mosto, are by-products of coffee fermentation, rich in microorganisms. They reduce fermentation time and add complexity to the coffee's flavor. Wilder Lazo, a genetics expert, provided the cherries for this coffee.
