Located at 1,800 m.a.s.l. on a side of a remarkable mountain range in Palermo, Colombia lays Diomed Montano Tovers’ beloved coffee farm Pensilvania. Diomed is a calm and joyful family man who lives and works on Pensilvania together with his wife, Nilsa. Together they raised three children, built their own house, and produce outstanding coffees.
The farm reaches a size of 8 hectares, which is equivalent to 20 football fields, and Diomed employs up to three permanent workers to help carry out all non-harvest chores—“the harder work”, he says. They fertilize with organic compost, weed, prune, and stump the coffee trees, as well as manage the lots of protected forest reserves. During the height of the harvest, he hires up to 16 pickers to carry out the hand-selection of his Castillo and Colombia varietal cherries.
The post-collection processing is done by Diomed and one other worker, in a spacious and colorfully painted wet-mill. The collected cherries are brought in twice a day, and left intact overnight, until around eight the next morning. Diomed then de-pulps the coffee and begins the fermentation stage. He uses a patio and covered raised bed system for drying, as well as a mechanical dryer. This micro lot is fermented for 60 hours and dried in the mechanical dryer for 40 hours.
