Product Description

Grown at 1,800–1,850 masl in Salento, Quindío, this Natural Anaerobic Papayo from El Ocaso undergoes 120 hours of anaerobic fermentation, followed by slow sun-drying to achieve optimal moisture content. This controlled process enhances the intense tropical and floral characteristics that define Papayo, producing a cup with vibrant mango notes, deep cacao richness, and delicate floral complexity.


Papayo is a rare varietal, believed to be a mutation of Maragogipe or Pacamara, first identified in Huila, Colombia. Recognized for its distinctive oblong cherries and exceptional cup profile, it remains a low-yielding but highly sought-after variety in specialty coffee. At El Ocaso, Santiago has expanded his selection of exotic varieties, including Gesha, Sidra, Tabi, and SL28, refining fermentation and drying techniques to highlight clarity and structure in each cup.


El Ocaso operates with regenerative farming practices, using shade-grown systems to regulate temperature and extend cherry maturation. Microorganism-based pest control, an on-site composting system, and minimal chemical inputs ensure long-term soil health and sustainability. Through our partnership, we support Santiago in expanding the reach of his coffee, helping him navigate climate challenges and evolving processing methods while preserving this exceptional varietal.
