    In 2006, João Hamilton and his brother Ivan dos Santos (from the Sitio Canaã farm), established a collaboration with Marcos Croce from Fazenda Ambiental Fortaleza (FAF). Their goal was to work together on a sustainable method for producing coffee. This program has set the focus on achieving the highest quality possible, while simultaneously respecting nature and people. Today, Sitio Canaã is a leading producer of top quality coffee in Brazil. We are honored to have had the opportunity to work with this team for the past 8 years and consider them our Brazilian family.

    This year, we’ve opted to purchase a new varietal from FAF. This coffee marks the first time we’ll be roasting a Yellow Icatu coffee - a relatively young varietal, the result of a long experimentation process of cross-breeding Arabica and Robusta breeds. By breeding together both branches of the coffee tree, farmers in Brazil have tried to create a varietal that would combine Robusta breeds’ resistance to leaf-rust and pests with the flavours and characteristics of high quality Arabica breeds. This specific Yellow Icatu has impressed us with its exceptional quality and delicate tartness.
