			<content:encoded><![CDATA[<p>Sadly, this last roast of Kenya AA Gichathaini will be our final one of last years crop. We will no longer be selling the Kenya in the shop or in our web-store until the new crop coffee gets in next month.</p>
<p>Since the new harvest in Kenya is in its 22+ week, its time for the current crop AA&#8217;s!!<br />
Bridget at Dormans however says the container ships next week!  So hopefully we will not have to wait long.</p>
<p>We are really excited for this new crop and will announce it as soon as its ready!!!  Of all the samples we received this year, this was the clear winner in multiple blind cuppings.  We can&#8217;t wait!</p>

			<content:encoded><![CDATA[<p>Since our return from our Winter 2012 origin trip, we have been introducing a different style of espresso than we have served in the past.  </p>
<p>Our current &#8220;bright&#8221; espresso is our Brazil FAF Sitio Canaa Farm Lot# 97, which we roasted much lighter than anything we have roasted in the past.  We have been serving two espressos for the last few weeks and both will require different ways of extracting that will work better for drinks like cappuccinos and lattes.  This however will affect the intensity of the drinks becasue we will make them how we like them best and feel they should be served.</p>
<p>Its been a bit of testing new waters for us and hopefully there were not too many inconsistencies in the drinks.  We are in the process training the staff on the new ways of extracting this coffee and we are really happy to move in this direction.</p>
<p>As the intensity of our lighter espresso based drinks increases, please feel free to let us know how you like your drinks.  With the temperature so cold, some people are also requesting milk drinks hotter than we normally make them.</p>
<p>Don&#8217;t hesitate to let us know how you like your drinks.  We love to talk about coffee and you should get the drink you want!</p>

We are very happy to start a direct trade relationship with Fazenda Ambiental Fortaleza and their partner farm Sitio Canaa in the Mococa state of Sao Paulo, Brazil!</p>
<p>Joao Hamilton &amp; Ivan Dos Santos&#8217; beautiful farm is where our current lots FAF# 91 and FAF#97 beans were grown. These small lots were meticulously grown and processed with the assistance of Marcos, Felipe and Daniel Croce, who were instrumental in the effort bringing this small lot of coffee directly from the farm to us in Berlin.</p>
<p>The two lots we have purchased are both clean Naturally processed coffees.</p>
<p>The Lot #97 is a Red Bourbon bean, harvested in the purple stage of development. We are currently roasting this coffee for a bright espresso and look forward to developing the profile to bring out its Vanilla/Cinnamon flavors. It has a creamy sweet peanut body and a port wine acidity.</p>
<p>Lot#91 is a rare Sumatra (Typica) variety that was harvested as a raisin (passa) and processed as a natural from there. In our filter roast, we taste toasted brown sugar and vanilla, with sweet and full body and well balance acidity. This is a limited offering and it will not last long.</p>

			<content:encoded><![CDATA[<p>We are very happy to be getting a wonderful naturally processed Brazil, which will be our first Directly Traded coffee.</p>
<p>Our goal in the future will be 100% transparency in our coffee sourcing and purchasing.<br />
This includes how much we buy coffee for, the cost of shipping and roasting.</p>
<p>Our first coffee we will attempt this with is from Joao Hamilton&#8217;s farm Sitio Canaa.<br />
We are going to work out the numbers in the next few weeks and will have this coffee as our key ingredient for our espresso in the first quarter of 2012!  We were also lucky enough to get a few bags of the Sumatra variety from this farm!</p>
<p>More is to come soon, but for now, check out the photos of the coffee loaded on the container at in Brazil!  Thank you to the Croce family at <a href="http://www.fafbrazil.com/fafbr/ip.asp?op=A-thefarm&#038;sc=A&#038;lg=E">Fazenda Ambiental Fortaleza</a> and Steffi and Pingo at <a href="http://www.quijote-kaffee.de/">Quijote Kaffee</a> in Hamburg, with whom we are sharing a container with.  We could not have done this without them!</p>

			<content:encoded><![CDATA[<p>So, welcome to our new site.  We updated the site to allow us more freedom to communicate about our coffee and cakes, but also to help our customers see where the coffee they drink comes from.</p>
<p>We will be receiving our first coffee, bought directly from a farm in Brazil and we want to use this site to help showcase the wonderful coffee farmers of the world.  Its just the beginning, but we are all very excited to see where this goes.</p>
<p>Five Elephant has decided to offer fully transparent coffee prices.  What this means, is that we will work to clearly show the whole cost chain, from workers at farms to us roasting the coffee.  It will take a few months for us to calculate and start this, but we are committed to it.</p>
<p>Stay tuned for more.  We have more information about our first direct partnership with Joao Hamilton&#8217;s farm Sitio Canaa.  With the help of Fazenda Ambiental Fortaleza, he is growing some of the best naturally processed coffee in Brazil.</p>
<p>Please be patient with our new site.  We are updating it over the next few days.</p>
